Daedalus Touch is a relatively new text editor for iPad that brings some slick tricks to the table. Among them:

You organize pages into “stacks” and navigate them all with good use of iOS pinch and zoom gestures
An optional extra keyboard row has quick-access punctuation keys that are smart about opening and closing characters
If you select a block of text, the character and word counter will update to show you just what’s in your selection
A built-in browser makes it easy to do quick research without switching apps
